How To Make Cauliflower Walnut Taco Meat

Cauliflower Walnut Taco Meat

Equipment:

  • Food Processor
  • Oven

Ingredients:

  • 2 cups cauliflower florets
  • 1 cup raw walnuts
  • 1/2 cup corn
  • 1 fresh tomato, diced
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 smoked paprika
  • 1/2 tsp cumin powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 tbsp tamari (tamari shoyu, or any soy sauce)
  • 1/2 tsp chili powder
  • Taco shells

Instructions:

  1. Preheat the oven to 375 degrees
  2. Place all the ingredients in a food processor and pulse until walnuts and cauliflower become crumbly. Be mindful of the texture and check from time to time.
  3. Spread mixture onto a lightly greased baking sheet
  4. Bake for 30 minutes, stirring halfway through to prevent over-browning.
  5. Carefully pour the mixture onto your taco shells. Top with corn and tomatoes.
  6. Serve and feast!
