Saturday marked the first day that Scarlett willingly, completely without me even asking, ate lettuce…!!!! HUGE DEAL. I’m still reeling over it. I’m so proud.

She just picked up a piece of plain romaine lettuce that I had put on her dinner plate (we were serving tostadas with chopped romaine) AND ate it. Then she ate another one! After that piece she went so far as to put the last piece in her mouth too!! Of course, immediately after swallowing she looked at me and announced, “I get dessert now Mommy.” Haha, but whatever incentive she had for doing it really doesn’t matter- because she DID it!! That’s all that I care about.

To top it all off Hunter officially started walking yesterday. He has been taking a step or two here and there for about a month now, but nothing serious. Well, yesterday he decided that today is the day. And so he just up and started walking across the room, walking around and around the recliner, walking back and forth to Dave and I, etc. He was a walkin’ fool.

I’m just CRAZY happy with all the wonderful things going down here.

Because today I am sharing with you a fantastic recipe for RAW Chocolate Cookie Dough FREEZER Fudge. It is the easiest thing to throw together- no baking required. All you need is a freezer. You’ve got one of those, right?

It has the most amazing texture- cool and chewy and melty-in-your-mouth all in one. Add some chopped walnuts on top and you can add crunchy to that list as well. Divine! Scarlett loooooves it.

Smart Substitutions:

  • Want Nutella fudge? Use hazelnut butter!
  • Brown rice syrup yields a ‘chewier‘ fudge and maple syrup yields a ‘meltier‘ fudge.
  • Use 1/2 cup coconut nectar in place of maple syrup for a SUPER healthy sweetener choice (my personal preference).
  • Add 2 tablespoons cacao nibs instead of 1/4 cup chocolate chips.

Raw Chocolate Cookie Dough Fudge
Serves: 12
  • ½ cup almond butter
  • ⅓ cup coconut oil, melted
  • ⅓ cup cocoa powder (or raw cacao powder)
  • ½ cup maple syrup *see note
  • 2 teaspoons vanilla extract
  • ½ (scant) teaspoon sea salt
  • ¼ cup (or more) mini chocolate chips and/or chopped nuts, optional
  1. Place all ingredients, except for chocolate chips/nuts, in a medium bowl and stir with a spatula until well combined. Mix in chocolate chips/nuts, if using.
  2. Pour into a parchment lined 8-inch-by-4-inch loaf pan. Sprinkle with more chocolate chips/nuts, if desired. Set in the freezer for 1 hour or until firm.
*Brown rice syrup yields a 'chewier' fudge and maple syrup yields a 'meltier' fudge.
**Use ½ cup coconut nectar in place of brown rice syrup for a SUPER healthy sweetener choice.

    Could I use youfresh naturals nut butter? It’s a mixture of coconut and almond better?
