Cranberry Chickpea Salad

Equipment:

  • Large Bowl

Ingredients:

  • 2 tbsp olive oil
  • 2 tbsp white vinegar
  • 3 cups cooked or 2 cans chickpeas, drained and rinsed
  • 1/2 cup organic dried cranberries
  • 1/2 cup walnuts or pecans, roughly chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 carrot, grated
  • 1/2 scallions (green onions), thinly sliced, white & green parts

Instructions:

  1. Combine all the ingredients in a large bowl and mix well except for the dressing.
  2. Dredge it with olive oil and white vinegar evenly, continue mixing for a bit. Season with salt and pepper.
  3. Serve with warm flatbreads and enjoy!
