This morning I woke up to the first snow fall of the season!! Yay! I love the beginning of winter when the snow just starts to fall and everything is that beautiful wonderland white. You know- before it all turns brown and muddy… haha.

And even better than that is having Scarlett come down the stairs all excited, “We’ve got snow!!!” Before this year she has been a little bit too young to understand it. It’s so sweet to see her excited about it.

I actually took a picture of it and posted it on my Instagram. I was that thrilled.

Speaking of! That is another thing I am really excited about- my new active Instagram account. I started it last year, but never really did anything with it. I just didn’t really understand the point of it.

I decided to give it another go recently and now I’m addicted to the darn thing… that’s all I need is another account I can’t stop checking.

So if you’ve got an Instagram account you should head on over to mine and follow me : ) I’m going to try and share some photos of good meals that we have and stuff so that it is not just personal photos. That way it will tie into the blog a little more.

Aside from the snow and Instagram stuff, I’ve also got these Lemon Creme No Bakes going on.

They are so super healthy and they give you a great fix if you want something sweet, but don’t want to overindulge yourself.

And they happen to be gluten-free too! Always a plus.

I find myself making little no bake cookies like these all the time with my new diet. They are hands down the healthiest and simplest treats to make. And who can argue with that?

No Bake Lemon Meltaways
Serves: makes 16
  • ½ cup almond meal/flour
  • ⅓ cup coconut flour
  • ¼ teaspoon sea salt
  • 2 tablespoons maple syrup
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • zest of 1 lemon
  1. Place all ingredients in the bowl of a food processor and process until completely combined and dough has come together. Shape into tablespoon-sized balls.
For fun, roll some in shredded coconut or powdered sugar!
Taste and add some stevia if you prefer them a little sweeter ; )
