There are about a million recipes out there for oatmeal cookies made from mashed bananas.

But I wanted to create one for myself.

One that was sweet enough WITHOUT using any refined sugars.

One that used nut butter for extra healthy fats!

And one that does NOT dry out from the oats…

These babies are the answer. They came out AMAZING. Totally impressively delicious. You wouldn’t think an ordinary cookie like these would really be anything to brag about… but trust me. These are.

Feel free to call these a “breakfast” cookie if that will make you feel better. Lots of people do that with this type of cookie. Personally to me, a cookie is a cookie. No matter how you swing it, haha. But do what you gotta do to get these in your belly because I’m tellin’ you…. they are GOOD.

 Simple Substitutions:

  • Allergic to peanuts or just not a fan? God ahead and sub almond butter.
  • Agave nectar is the perfect substitute for maple syrup.
  • And if you are trying to avoid canola oil, go ahead and use coconut oil instead.

Peanut Butter-Banana Oatmeal-Chip Cookies

Ingredients
  • 1½ cup old fashioned oats, divided
  • 1 tablespoon ground flaxseed
  • ¼ teaspoon sea salt
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon, optional
  • ½ cup mashed banana (from about 1 large banana)
  • ⅓ cup peanut butter
  • ¼ cup maple syrup
  • 1 tablespoon canola oil
  • 2 teaspoons vanilla extract
  • ¼ cup chocolate chips (optional- can sub with chopped nuts)
Instructions
  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  2. In the bowl of a food processor, process ½ cup of the oats until they make a fine powder, about 1 to 2 minutes (you'll have made oat flour). Dump oat flour into a large bowl. Add remaining oats, ground flaxseed, salt, baking powder and cinnamon, if using. Stir to combine; set aside.
  3. In a smaller bowl, whisk together mashed banana, peanut butter, maple syrup, oil, vanilla extract and chocolate chips.
  4. Add wet ingredients to dry and mix with spatula to incorporate.
  5. Drop by rounded tablespoonfuls onto baking sheet and bake for 12-13 minutes. Let cool on pan for a few minutes, then transfer to a cooling rack.
