How To Make Pumpkin Chili

Equipment:

  • Saucepan
  • Cooking stove

Ingredients:

  • 2 pounds ground pork, beef or chicken
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp extra virgin olive oil
  • 1/2 cup water
  • 1 large tomato, diced
  • 1 bell pepper, diced
  • 2 (15 ounce) cans kidney beans, drained
  • 1 can 100% pumpkin puree
  • 1/2 cup tomato sauce
  • 1 tbsp chili powder
  • 1/4 cup white sugar
  • 1 tsp cinnamon powder
  • Salt and pepper

Instructions:

  1. In a large saucepan over medium heat, heat the oil and cook the garlic, onion, and ground meat until brownish and soft. Add the bell pepper and tomato and mix.
  2. Pour the pumpkin puree, water, tomato sauce, and kidney beans. Stir for a bit and add the chili powder, sugar, and cinnamon. Salt and pepper to taste.
  3. Simmer for 40-50 minutes, stirring occasionally.
  4. Serve warm.
