How To Make Single Serving Carrot Cake

Single Serving Carrot Cake

Equipment:

  • Oven
  • Ramekin
  • Mixing bowl

Ingredients:

  • 1/4 cup all-purpose flour
  • 1 large egg
  • 1 tsp coconut oil
  • 1 tbsp mashed banana
  • 1/4 tsp cinnamon
  • 1/8 tsp pumpkin pie spice
  • 1/2 tsp baking powder
  • 2 tbsps grated carrots
  • 1 tbsp maple syrup
  • 1/2 tbsp brown sugar

Instructions:

  1. Preheat oven to 350 degrees F. Spray a small ramekin with nonstick cooking spray.
  2. In a medium bowl, add the mashed banana and egg then mix.
  3. Add the remaining ingredients, mix until fully combined.
  4. Transfer batter into ramekin and bake at 350 degrees for about 25 minutes or until you stick a toothpick in the middle and it comes out clean.
  5. Serve warm and enjoy!
