Ingredients:

Spicy Sweet Potato Croquettes

  • 2 cups potatoes, mashed
  • 2 tbsps butter
  • 1 tsp salt
  • 1/4 tsp ground black pepper
  • 2 tbsps brown sugar
  • 1 tbsp chili powder
  • 1 pack bread crumbs
  • 1 egg, slightly beaten
  • 1 tbsp water
  • Oil, for deep-frying

Pumpkin Seed Chipotle Cream

  • 1/2 cup raw pumpkin seeds
  • 3 tbsp raw cashews
  • 2 tbsp fresh lime juice or lemon juice
  • 1/4 tsp (rounded) sea salt
  • 3/4 cup plain non-dairy milk (+ 1 tbsp)
  • 1/2 – 1 tsp dijon mustard
  • 1/2 – 1 tsp chipotle hot sauce adjust to taste

Instructions:

  1. Combine mashed sweet potatoes, butter, salt, pepper, and brown sugar; beat until smooth and well blended. Chill thoroughly.
  2. Shape chilled mixture into croquettes. Mix slightly beaten egg with water in a bowl. Put the fine bread crumbs in another bowl.
  3. Dip sweet potato croquettes into crumbs, then into the beaten egg mixture, then in crumbs again. Deep-fry for about 370 F, until croquettes are golden brown. Drain well.
  4. For the Pumpkin Seed Chipotle Cream, using a standing blender or an immersion blender and deep cup or jar, puree all the ingredients.
  5. Puree until very, very smooth, adding more milk or water to smooth out and thin, as desired. Be sure to blend this sauce long enough for it to become creamy smooth.
  6. Add additional Dijon and/or chipotle hot sauce to taste.
  7. To use as a dip to Spicy Sweet Potato Croquettes, simply make ahead and refrigerate for an hour or more before serving. If you prefer a thinner consistency, stir in extra milk or a touch of water.
