This delicious and popular dish has lots of healthy flavors. You can never go wrong serving it alongside steamed white rice or straight from the oven paratha bread. It’s a full gorgeous meal to satisfy your whole appetite. Perfect at anytime of anyday.

How To Make Vegetable Masala

Vegetable Masala

Equipment:

  • Saucepan
  • Food processor

Ingredients:

  • 2 potatoes, peeled and cubed
  • 1 carrot, peeled and chopped
  • 1/2 cup chickpeas
  • 1 cup tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 inch fresh ginger, peeled and sliced
  • 1 bell pepper, diced
  • 1 1/2 tsp garam Masala
  • 1/2 tsp chili powder
  • 1/2 cup light coconut milk
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground turmeric
  • 1 tsp salt
  • 1/2 cup water

Instructions:

  1. Pulse ginger and garlic in food processor until finely chopped. Add tomatoes and cayenne pepper, and pulse until combined. Set aside.
  2. Heat oil in saucepan over medium heat. Add onion and bell pepper, and sauté for 10 minutes, or until softened. Stir in potatoes, carrots, garam masala, turmeric and chili powder. Cover, reduce heat to medium-low, and cook 10 minutes, stirring occasionally.
  3. Add chickpeas, tomato mixture, and 1/2 cup water. Simmer for 20 minutes, adding coconut milk 2 minutes before removing from heat. Season with salt and pepper.
  4. Serve warm with steamed rice or freshly cooked paratha bread.
