When I was younger I used to LOVE those instant chai drinks. The kind that comes as a powder in a can, ya know? It was always a really great alternative to instant hot chocolate on those cold autumn or winter days.

Now that I am older and know better, I don’t partake in either of those things. Especially with the recent diet change- I wouldn’t even dream of it!

But that doesn’t mean I can’t take those wonderful chai flavors and make them into something yummy AND good for me at the same time.

I can’t help it, I just keep pumping them out in the kitchen and they are just too darn good not to share…

And even though this smoothie is icy cold (since it is a smoothie after all), I don’t really see a reason why you can’t make it into something warm? Just leave out the ice and blend it in your blender until smooth, then heat it up on the stove. You can add a touch of starch or xanthan/guar gum before heating to thicken it and give it a creamy texture, if that is something you would be interested in. Actually… that sounds pretty good. I might try that soon.

If you don’t like coconut so much you can make it your plain by omitting that shredded coconut and using almond or soy milk instead of coconut milk. Then you would have a delicious, simple Chai Smoothie on your hands! Nothing wrong with that.

This smoothie really does it for me because of those chai drinks I was so fond of as a kid. I am glad I can still enjoy those flavors as an adult without all the guilt. Do you guys have any childhood favorites you wish could be made healthier for you to enjoy today?

Smart Substituions:

  • Omit the dates and use some stevia instead to lower the sugar content.
  • Forgo the coconut flavor by omitting the shredded coconut and exchanging the coconut milk for almond or soy milk.

Coconut Chai Smoothie
Serves: 1
  • ¾ cup boxed coconut milk
  • ½ cup ice
  • 1 frozen banana
  • 2 large dates (4 if smaller)
  • ½ teaspoon cinnamon
  • ⅛ teaspoon ground cardamom powder
  • ½-inch cube fresh ginger (or ½ teaspoon ground ginger)
  • 1 tablespoon unsweetened shredded coconut, preferably toasted
  • 1 tablespoon pecans*
  • 1 tablespoon hemp seeds*
  • 1 tablespoon cacao nibs*
  • *all optional, but extra delicious and nutritious!
  1. Place ingredients in blender and blend until smooth.
