Autumn Quinoa Salad


  • Saucepan
  • Large Bowl


  • 1 1/2 cup quinoa
  • 1 carrot, shredded
  • 2 green onions, minced
  • 1 cup frozen green peas, thawed
  • 2 tbsp parsley, finely chopped
  • 1 tbsp lemon juice
  • 1/2 cup dried cranberries
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp extra-virgin olive oil
  • 1 tbsp rice vinegar


  1. Boil 3 cups of water in saucepan. Add the quinoa and salt
  2. Reduce the heat to maintain a simmer, cover and cook until water is absorbed
  3. After the quinoa is cooked, transfer into a large bowl
  4. Toss in all the other ingredients and mix well, season with salt and paper
  5. Serve and enjoy!
