I’m reallllly excited to share this recipe with you!

I threw it together on a whim one night and loved the idea so much that I went back later to test the recipe and perfect it to share with you : )

I mean, who is really going to say no to the quickest, easiest, healthiest chocolate chip cookie recipe ever?! That also happens to be VEGAN and GLUTEN-FREE (as long as you use gluten-free oats).

My favorite part of these cookies is that the recipe only makes FOUR cookies. Which means no temptation to binge on my part, hehe! You’re probably saying to yourself, “4 cookies? That is great for the two of us!” Wellllll, I say to myself, “4 cookies? That is perfect for ME!” haha. I have habit of eating for two when it comes to sweets… my achilles heal! The sad part is that if the recipe made 6, I’d probably eat all 6 too. YIKES!

My 2nd favorite part of these cookies is that you just throw them together in your food processor and they are ready for the oven in less than 5 minutes. NO JOKE.

Oat Chocolate Chip Cookies
Serves: makes 4 cookies
  • ½ cup quick oats
  • 1½ teaspoon arrowroot starch, tapioca starch, or cornstarch
  • ¼ teaspoon baking soda
  • pinch salt
  • 3 tablespoons brown sugar
  • 1 tablespoon canola oil
  • 1 tablespoon non-dairy milk
  • ¼ teaspoon vanilla extract
  • 2 tablespoons chocolate chips
  1. Preheat oven to 350°F. Line a baking sheet with parchment paper.
  2. In the bowl of a food processor fitted with a metal blade, process oats, starch, baking soda, salt, and brown sugar until oats are very finely ground, about 1 minute.
  3. Add oil, milk, and vanilla. Process until the mixture comes together and forms a ball of dough, 1 to 2 minutes, scraping bottom of bowl with spatula halfway through. If dough remains crumbly, add a tiny splash of milk and continue to process.
  4. Scrape dough into small bowl and stir in the chocolate chips.
  5. Scoop rounded tablespoonfuls out onto baking sheets, leaving about 2-inches space between each.
  6. Bake for 8-10 minutes, edges will remain light in color. Set baking sheet on wire rack to cool for 5 minutes. Remove cookies to rack and let them cool completely.

    These sound fantastic – can they be made with regular oats (not quick cooking oats)?

    I would assume so. Just grind them as fine as possible to get the best texture.

    I just made these and they didn’t rise at all! Instead, they just flattened out completely :( I had to scrap them off with a spoon, which was still delicious…

    Hm, I don’t know what could have gone wrong. I’ve made them a ton of times and they come out just like in the picture. Did you not use the starch? Because without the starch they will just spread. The starch absorbs the moisture and binds the dough since there are no eggs.
