Quick Carrot Salad

So my laptop is broken. And I am pretty upset about it.

The trackpad for the mouse is all jacked-up. It’s so strange. It’s almost like somebody is controlling it from a different location or like it has a mind of it’s own. The thing is just completely out of control and I can’t seem to rangle it in.

Being in Germany, it’s not so easy to get these kind of things fixed. If I were in the States I would have taken it to the Geek Squad and gotten the whole thing fixed straight away. But, no such option here.

We’re going to buy a mouse for it and hope that makes it usable again. Fingers crossed!

In the mean time, things are going to be a little chaotic around here. Please try and bare with me. My posts are probably going to be very sporadic. And maybe a little rushed feeling. Somehow, even though I am doing less blog work from my laptop being broken, I am more disorganized than ever. How does that happen?

I dunno. My whole grove is just thrown off by this thing.

I usually eat just plain carrot sticks, sometimes with a dip, but almost every day. I don’t really know why. I’m not some sort of carrot enthusiast or anything… I guess I just feel like they are a good nutritional boost for my day.

So, you can bet I get pretty sick of eating carrot sticks. That’s why I came up with this simple alternative. It changes the texture up and it gives the carrots a little sweetness (my achilles heal- sugar).

Ohhhhh, and I LOVE the walnuts in it. Maple-Walnut. One of my FAVORITE cookies! It’s no wonder the combination appeals to me in a salad.

Quick Carrot Salad
Serves: 2
  • 1 cup shredded carrot
  • 1 tablespoon pure maple syrup
  • 1 teaspoon lemon juice, optional
  • 2 tablespoons chopped walnuts
  • salt and pepper to taste
  1. Mix all ingredients together in a small bowl until well combined.

    This looks really good. Any suggestions for something instead of walnuts for a tree nut allergy?
