Equipment:

  • Grater/Food Processor
  • Mixing bowls

Ingredients:

  • 1 lb carrot, peeled and grated
  • 2 tbsp parsley, finely chopped
  • 1/4 cup green onion, chopped
  • 2 cloves garlic, finely chopped

Dressing

  • 2 tbsps extra virgin olive oil
  • 2 tbsps lemon juice
  • 2 tsp honey
  • 1/2 tsp ground cumin
  • 1 tsp Dijon mustard

Instructions:

  1. Grate the carrots. Using the big holes of a box grater, or you may use a food processor.
  2. In a large bowl, combine the salad ingredients.
  3. In a small bowl, whisk the salad ingredients until completely blended.
  4. Pour the dressing into the salad mixture and toss until evenly coated.
  5. Serve and enjoy!
