How To Make Mediterranean Chopped Salad

Mediterranean Chopped Salad

Equipment:

  • Mixing bowls

Ingredients:

  • 1 cup cherry tomatoes, cut in half
  • 1/2 medium red onions, diced
  • 4 cups lettuce, chopped
  • 1 cup cucumber, chopped
  • 1 cup bell pepper, diced
  • 1 cup black olives
  • 1/4 cup feta cheese, chopped
  • Fresh parsley, chopped
  • 1 tbsp freshly squeezed lemon juice
  • 1 1/2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper

Instructions:

  1. In a small bowl, put olive oil, lemon juice, garlic powder, salt and pepper and whisk together. Set aside.
  2. In a large bowl, put all the other salad ingredients. Set aside a bit of parsley and feta cheese.
  3. Pour the dressing over the salad and toss well.
  4. Sprinkle with the remaining feta cheese and parsley.
  5. Serve and enjoy!
