Yay, for smoothies that taste like desserts!

Booooo, for dropping my vitamix, cracking the bottom of the container, having to send it back for replacement, and being without a blender for 3 months : (

I’m not kidding. I’m just about fighting off tears right now.

What am I going to do without my vitamix…? I certainly won’t be making this smoothie! (Or any other one for that matter) For those of you that have been following me, you might know by now that I drink two smoothies a day. I’m a smoothie-addict. For sure. Being without might send me into a twitchy meltdown.

I guess we won’t know until I actually mail back my vitamix. For now, it’s still usable. It just leaks. SO I imagine I will put it off until the very last possible moment when it starts to get yucky from the moisture in the crack or when the crack stops leaking but starts pouring out the bottom. Which ever comes first.

When I first got the thing back at the end of February, I made the same 3 smoothies again, and again, and again. For probably about 2 months. Blueberry Almond Butter Smoothie, Zucchini Bread Smoothie, and THIS Carrot Cake Smoothie. They were so delicious when I first made them, that I could go a lifetime drinking just them. Turns out I maxed out at 2 months.

BUT! Every now and then I still return to my old favorites.

And do you see that sweet little, mini carrot cake in the background there???? THAT is a Single Serving Vegan Carrot Cake. Delicious.

Are there any smoothies that you guys are addicted to and can’t get enough of?

Smart Substitutions:

  • Replace the raisins with the dates
  • I’ve used up to 8-ounces carrots in this before and 2 cups of spinach. You may need to add an extra tablespoon of raisins and another splash of liquid, but it still tastes great! And you get a FULL days serving of veggies in 1 smoothie!
  • Use coconut water to lighten the calories (or plain water).
  • Use coconut water (or plain water) and 1/4 cup soaked walnuts instead of almond milk to give it a really great carrot cake flavor!

Carrot Cake Smoothie
Serves: 1
  • 3 tablespoons raisins
  • 1 cup non-dairy milk (I prefer unsweetened almond)
  • 1 cup peeled, chopped carrot
  • 1 banana, preferably frozen
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • 1 cup spinach, optional
  1. In a small bowl, soak raisins 5 minutes in the hottest tap water to soften. (They will blend better this way).
  2. Place all ingredients into blender and blend until completely smooth.
I've added up to 8 ounces of carrots and 2 cups spinach in this smoothie and it is still delicious! You can add more carrots if you'd like too- just add a bit more liquid to thin it out.
Raisins can easily be swapped for 4 dates.
If you want this smoothie more chilled, add ½ cup ice.

    Oh, my, this recipe looks so delicious! And coconut water instead of milk? That’s brilliant! The only thing I love more than eating carrot cake, is justifying eating carrot cake. Now, I don’t have to. Thanks for sharing!

    Hi! Was wondering if I could use carrot puree (homemade) or would that “kill” the goodness of raw carrots?

    haha well, raw is always better for you, but cooked purée would work wonderfully too!

    Vitamix is SO excellent about their warranty policy. You will probably not have to send the container back. Call them and tell them what happened and they will probably just send you out a new container right away. Let us know what happens !

    This looked pretty good, but I honestly didn’t like it :( the recipe needs to be tweaked a lot. Forcing myself to finish as to not waste food. :/

    Carrots are shredded raw and then cooked in the cake.

    Came out so good. I replaced the raisins with an apple, because that’s what I had on hand. It came out very good and surprisingly it really did taste like carrot cake.

    Have you ever tried this with non-fat yogurt? I need to keep my protein up as well as get as many veggies in as possible

    I discovered this recipe in the autumn last year, right after I bought my vita mix. I’m buying organic carrots in 5 pound bags because I do this recipe so often. I’ve tried loads of variations-kale, arugula- I usually add flaxseed meal and Chia seeds. I add ginger and pineapple. What’s a carrot cake without ginger and pineapple? And walnuts – that I put in at the very end and try not to make too smooth. I’ve used many different liquids. My favorites are the ginger and multi-green kombucha. But I’ve used coconut milk- so yummy and creamy-and unsweetened almond milk and Kiefer and, and, and, … this always turns out good!

    Loved it! It was so good, and I love the undertones of cinammon. I was scared it was going to end up tasting like banana, but I was pleasantly surprised. However, I guess I added a bit too much spinach, because mine came out green, not orange. But it was still delicious!

    With that cup of spinach. Don’t be deceived, this smoothie is green. And it is a job to try and down it. Really terrible. All the good comments are of people who just think it looks good. The bad comments are people like me, who unfortunately made it. Yuck!

    Wrong sir. I make this regularly, with many variations to increase the protein, and I love it! I only use organic produce because I found that the flavor of conventional produce made this taste like dirt. Perhaps that was the problem for you.

    Just made this carrot cake smoothie for my breakfast and it was very delicious! I’ve been wanting some kind of different flavoring for my morning smoothie and this was perfect. Next time, I think I will blend the raisins alone first because they ended up practically whole (I have a pretty basic blender). Also, I might add more cinnamon and perhaps even ginger to give it even more of a kick. Thank you for the recipe!

    I’m drinking this as I write…I didn’t want to wait to freeze my banana and I had no raisins so I used Medjool dates. I didn’t know how many to use, so my smoothie is way sweet. It’s definitly a keeper. Next time with frozen bananas, raisins (or 2 dates) and a little less cinnamon. Thank you! Oh, I used a NutiBullet to blend it…worked great:)
