This was the very first meal we had after our big diet change.

At the time, I was still reeling from what I had read in Kimberly Snyder’s book, “Beauty Detox Solution” (which was my inspiration for our diet change). It sent me ransacking her blog and I came across a recipe for RAW Taco Salad. What a perfect way to transition Dave! He loves tacos. But would he accept a non-tortilla, non-beef version of his favorite meal? I was about to find out.

There was no way I could feed Dave the exact recipe from her site though. It was far too sparse. Definitely more ideal for women looking to shed pounds quickly by resorting to eating like rabbits… In order to prevent Dave from being turned off completely from this diet, I would have to create substance.

I turned to good ol’ carbs!

Brown rice, specifically.

Rice is pretty standard in Mexican-type dishes so I knew it would work well in this situation. Rice and bean burritos are a personal favorite of mine. Ohhhhh, speaking of- beans would go pretty well in this too!

But I kept things pretty simple here- rice, lettuce (romaine and red leaf), a touch cilantro, chopped tomatoes, sliced avocados, and diced red onions.

Not to mention the very best part of this salad that creates the great TACO flavors…

Walnuts! Delicious, taco-seasoned, chopped walnuts : )

And believe it or not, after Dave was all done eating this he turned to me and said, “I didn’t miss the meat at all.”

My jaw almost fell to the floor. He then went on to say how he would be as equally happy eating this as eating an actual beef taco. Really!

Oh, and let’s not forget about the “dressing“…. SALSA! The perfect topping for anything taco.

Detox Taco Salad
Serves: 2 large salads
 
Ingredients
  • For the Walnut-Spice Mixture:
  • ½ cup walnuts (preferably soaked at least 8 hours and rinsed well), chopped fine (by hand or food processor)
  • 1 teaspoon ground cumin
  • ½ teaspoon coriander
  • rounded ¼ teaspoon chili powder
  • ¼ teaspoon dried oregano
  • 1½ teaspoon low-sodium tamari
  • For the Salad:
  • ½ head romaine lettuce, chopped
  • ½ head red leaf lettuce, chopped
  • ⅓ cup cilantro, chopped
  • 1 tomato. chopped
  • 1 avocado, chopped
  • 1 small red onion, chopped fine
  • salsa
Instructions
  1. In a small bowl, mix together all of the walnut-spice mixture ingredients until well combined.
  2. In a large bowl, toss together lettuces, cilantro, tomato, avocado, red onion and walnut spice mixture.
  3. Serve with salsa as dressing.
Notes
To make this more filling add 1 cup cooked brown rice or your favorite grain such as quinoa, millet, wheat berries, etc.
