Pasta with Triple Tomato Sauce

Wow, let me just tell you- yesterday… yesterday I was a machine.

It was just one of those days where you wake up and have all this pent up energy and your just bursting at the seams to be productive.

Those are few and far between for me (although they are becoming more frequent since my diet change). So I took full advantage of my mood and went crazy cleaning and organizing the whole house. I even went so far as to go out and get some errands done around town.

Vacuum? Check. Mop? Check. Dust? Check. Laundry? Check. Groceries? Check. Gas? Check. New baby bottles? Check.

I mean, you name it and I did it yesterday.

But guess what? By the time that 5 o’clock came around, the last thing I wanted to do was make dinner. I was completely SPENT.

Go figure…

Lucky for me, I have this awesome recipe for the quickest, most delicious tomato sauce ever!!! And it just so happens to be animal product free and as you might suspect- nutritious : )

I’ve made this sauce a countless number of times. It’s my saving grace on busy days. Plus it freezes incredibly well.

We used to eat a jar of Prego sauce and ground beef with our spaghetti. It has kind of been a tradition since Dave and I were dating. Between that and local pizza, it was pretty much the only thing ever on the menu.

Since discovering this sauce I don’t even glance at jarred pasta sauce in the grocery aisle anymore. There is just no comparison. I was never a big jarred sauce fan anyways, it always seemed runny and watered down to me. Dave was the one that actually enjoyed the flavor. But even he inhales this homemade sauce, having no problem leaving the jarred stuff behind forever.

Triple Tomato Sauce with Pasta
Serves: 6
  • 1 pound pasta (spaghetti or penne both work great)
  • 2 medium tomatoes, cored and roughly chopped
  • 4 oil packed sun-dried tomatoes
  • 2 tablespoons tomato paste
  • 1 /4 cup packed basil leaves
  • 2 garlic cloves
  • ⅓ cup extra-virgin olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon ground pepper
  1. Bring a large pot of water to a boil over high heat. Cook the pasta according to package instructions.
  2. While pasta is cooking, in the bowl of a blender, process remaining ingredients until completely smooth.
  3. Drain pasta, reserving ⅓ cup starchy cooking liquid.
  4. Toss pasta and tomato sauce together to coat well, using starchy water to thin out, if necessary.
  5. Serve immediately.
You can make this in the food processor, it just won't be as creamy.
You can easily cut down on the oil in this recipe and replace it in equal amounts with vegetable stock/broth or starchy cooking water.
