Oh gosh I laughed so hard this morning. Dave totally made my week.

This is how it went down- Dave made up a Green Smoothie this morning then came into the living room all upset with me…

DAVE: This has WAY too much lemon!!! Why did you tell me to use all that leftover lemon!?! This is terrible. Completely un-drinkable!

ME (completely baffled): I didn’t tell you to use all the lemon, I said you could use just half if you wanted. But either way it wasn’t that much lemon. It shouldn’t be that bad.

DAVE: Here- you try it then.

ME: Uggghhhh. Oh my gosh! That isn’t lemon. I don’t know what that is, but it is NOT lemon. It’s spicy… what did you do???

DAVE: Nothing.

ME: It tastes like ginger. Why does the lemon juice taste like ginger…

*Lightbulb moment*

ME: OH MY GOSHHHHHHH!! You didn’t?! Did you put that ginger root that I had in the freezer in there??????


ME: You DID!!! It was in a baggie just like the frozen bananas and you thought it was a banana! Bahahahaha

This was all proceeded by utter hysteria on my end for at least 20 minutes. I don’t know why, but I just thought it was the funniest thing in the world. Dave couldn’t see the humor. I sure got a kick out of it though.

Even now I can’t wipe the stupid grin off my face.

Hahaha, ohhhh man. Good stuff.

Yup. Another dessert smoothie. They’re kind of my thing if you haven’t noticed.

I like making healthy smoothies that don’t really taste healthy.

This one takes super, antioxidant packed beets and turns them into a chocolatey red, sweet smoothie. If you use agave nectar and some soaked cashews (up to 1/4 cup), you’ll really be in for a treat! Nice and sweet and rich. With the added bonus of being great for you! (Without the cashews it’s on the thinner side- but still delicious)

Red Velvet Cake Smoothie
Serves: 1
  • ¾ cup almond milk
  • ½ cup chopped beets
  • ⅓ cup dates (or 1-2 tablespoons agave nectar)
  • 2 tablespoons cacao powder
  • ½ teaspoon vanilla extract
  • ½ cup ice (preferably made with coconut water)
  1. Combine all ingredients in blender and blend until completely smooth.
You can add 2 tablespoons of soaked, rinsed cashews to make this extra CREAMY. For a sweeter smoothie use agave nectar instead of dates.

    Did you steam the Beets before? I tried this with frozen Beets and it wasnt tasting too … ‘sweet’

    Yes- I do. If you are using raw beets just stem and peel. If you roast your own beets, stem them, but keep the skins on for cooking. After cooking, remove the skin.

    I just have to say I LOVE THIS. I have made it several times now! It is so hard to add variation to my toddlers diet and smoothies is about the only way I can do it, my daughter cant get enough of it :) I have sent the link to just about everyone I know!

    ps. I used honey instead of dates or agave because I love the slight flavor it gave it!

    Its pretty good, seems to be missing a kick though like your detox smoothie has that I love so much. Maybe its because I couldn’t find fresh dates.

    Yum! Ready to make – N O W – but I have an important question; raw beets or lightly steamed (thinking Trader Joes, vacuum packed variety) are best? Clearly raw is healthiest but maybe lightly steamed gives a better texture?

    Vacuumed packed variety. That’s actually what I used here. Definitely not raw, you want them to be cooked.
