Pasta with Triple Tomato Sauce

Equipment:

  • Blender
  • Cooking Pan

Ingredients:

  • 1 lb. penne pasta (or any desired pasta will do)
  • 2 big tomatoes
  • 2 tbsp tomato paste
  • 4 oil-packed sun-dried tomatoes, drained
  • 1/4 cup finely chopped parsley
  • 4 large basil leaves
  • 1 tbsp salt
  • 1/2 tsp pepper
  • 1 clove of garlic
  • 1 tbsp of extra-virgin olive oil
  • 1/2 cup grated cheese

Instructions:

  1. Boil water in a large pot with 1 tbsp of salt and 1 tsp of olive oil
  2. Cook pasta for 5-7 minutes
  3. In a blender, combine all the ingredients except for the parsley and cheese
  4. Once blended and mixed thoroughly, heat the sauce in a pan for 5-10 minutes
  5. Mix the pasta and sauce and top it with grated parsley and cheese
  6. Serve and enjoy
