Butternut Squash Soup

Equipment:

  • Pot
  • Blender

Ingredients:

  • 3 pounds butternut squash, diced and seeds removed
  • 2 tbsp butter
  • 1 medium-sized onion, minced
  • 4 garlic cloves, minced
  • 1 carrot, grated
  • 6 cups chicken/beef stock
  • Drizzle of heavy cream
  • 1/4 tsp salt
  • 1/8 tsp of pepper

Instructions:

  1. Melt the butter in a soup pot over medium heat, add onion and garlic and cook for 5 minutes or so until onions are soft
  2. Add the roasted butternut squash [1] *see source recipe* and stir for 2 minutes
  3. Add the stock and grated carrot, bring the liquid to a boil over high heat, then reduce to a simmer for 5-10 minutes
  4. Time to puree the soup. Try to cool the soup slightly before blending. Do this in batches.
  5. Add more seasoning as necessary.
  6. Serve in a bowl and drizzle it with heavy cream (and a few pumpkin seeds, optional). Enjoy!
