How To Make Chocolate Spinach Muffins

Chocolate Spinach Muffins

Equipment:

  • Food processor
  • Oven
  • Bowl
  • Cupcake tins

Ingredients:

  • 1 banana, mashed
  • 2 large egg (or 2 medium-sized)
  • 1/3 cup coconut oil, melted
  • 2 tsp vanilla extract
  • 1 1/2 cup all purpose flour
  • 2 cups spinach, finely chopped
  • 1/2 tsp baking soda
  • 1/2 cup cocoa powder
  • 1/2 cup sugar
  • 1/2 cup milk
  • 1/2 cup chocolate chips

Instructions:

  1. Place banana, milk, and spinach in a small food processor and process until smooth.
  2. Transfer into a large bowl and add the rest of the wet ingredients. Mix until smooth.
  3. Add in the dry ingredients and mix.
  4. Spray your cupcake tin with coconut oil cooking spray. Fill muffins about 3/4 of the way full.
  5. Bake at 350 degrees for about 20 minutes or until the center is fully cooked.
  6. Serve warm and enjoy!
