How To Make Naturally-Sweetened Chocolate Cupcakes

Naturally-Sweetened Chocolate Cupcakes

Equipment:

  • Large bowl
  • Oven
  • Food processor/blender
  • Muffin pans

Ingredients:

Cupcake

  • 4 eggs
  • 1/3 cup coconut oil
  • 1 cup maple syrup
  • 1 tsp vanilla extract
  • 1 1/3 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 tsp baking powder
  • 1 tsp salt

Frosting

  • 1/2 ripe avocado
  • 3 tbsp maple syrup
  • 2 tbsp cocoa powder
  • 1/4 cup coconut milk

Instructions:

  1. Line a 12-cup muffin pan with paper liners. Preheat the oven to 350 degrees.
  2. In large bowl, whisk the eggs, oil, coconut oil, maple syrup, and vanilla extract.
  3. Put together the flour, cocoa powder, baking powder, and salt to the wet ingredients. Mix until well-combined.
  4. Pour the batter into the muffin pan, filling it almost full.
  5. Bake for about 18-20 minutes. Let it the finished goods cool at room temperature.
  6. For the frosting, simply place all of the frosting ingredients in a food processor and blend until smooth – pipe your cupcakes once they have completely cooled.
  7. Serve and enjoy!
