I’ve always had a soft spot for Mint Chocolate Chip. It was one of my all-time favorite ice cream flavors growing up (rivaled only by cookie dough…).

So this smoothie is like a dream come true for me.

Seemingly indulgent, yet oh-so-good for you. Oh yes, pleassssse!

It’s green so you know it is chocked full of healthy nutrients. But it also tastes good.

Sweetened with banana.

Made creamy with some cashews.

Ultra frosty thanks to frozen spinach.

And super flavor packed from fresh mint leaves.

Ohhh, sweet heaven do I LOVE this smoothie!

And here are a few extra thoughts-

Did you know that mint leaves are rich in carotene, vitamin C, magnesium, copper, iron, potassium, and calcium? Essentially great for eye and cardiovascular health, the immune system, protecting against cancers, and strengthening bones.

And cacao nibs! One of my favorites. Like pure dark chocolate health. They are full of antioxidants, iron, magnesium, and fiber.

Then there is spinach… we all know how great spinach is for you.

Smart Substitutions:

  • Want to skip the banana? Use 1/4 cup (about 6) dates!
  • Sub out the cashews for some hemp seeds.

Mint Chip Smoothie

Serves: 1
 
Ingredients
  • 1 cup frozen spinach
  • 1 frozen banana
  • 1 tablespoon fresh mint leaves (packed)
  • 2 tablespoons cashews, preferably soaked at least 2 hours
  • 2 tablespoons cacao nibs
  • ½ teaspoon vanilla extract
  • 1 cup almond milk (or other non-dairy milk)
  • additional sweetener, to taste (optional)
Instructions
  1. Place all ingredients in blend and blend until smooth. Sweeten additionally to taste, as desired.
Notes
Double the cashews (to ¼ cup) for an extra creamy, milkshake-like treat!

    I just made a variation of this. I used avocado instead of cashews, water for half of the milk and cocoa powder instead of cacao nibs. So the smoothie was dark brown, and delicious! My youngest daughter loved it too. Oh and I increased the mint because I LOVE mint. I’ve been making the super DETOX smoothie too and I love the way it makes me feel. Thank you for your recipes!
