Orange Creamsicle Smoothie

Orange Creamsicle Smoothie @ #vegan #smoothie #healthy

I forget if I mentioned this or not, but I don’t have my laptop at the moment. I’ve actually been without it these last 3 weeks. I’m going nuts! I do EVERYTHING on my computer. Including blogging and photos.

Thus, the hysteria of smoothie recipes I’ve been sharing with you lately. They are the only thing that I have saved outside my computer.

I have one more smoothie recipe comin’ up and then I will officially be out of recipes to share until Dave gets back with my laptop in April. Going to be quite the hiatus here at The Green Forks.

I’m sorry about that. I know that most people are still living in the never-ending blizzard that is this winter… but I have no other options. I’ve got no photo-editing software on my desktop.

So, yes this smoothie is frosty and chilly. BUT it is also super, dupper delicious!!! And maybe if you live somewhere where there isn’t actually snow, you’ll try it. OR! You could just pin it and save it for when things start to defrost one day ;) It’s superb, you’ll want to do that. Especially if you’re a fan of Orange Julius’. This is the healthy, lighter, homemade version of that tasty mall treat.

And in non-recipe related news- Scarlett has started eating oatmeal! WOO-HOO! I’ve tried and tried, but she has always refused to eat it. So she basically would just have toast for breakfast since she won’t eat cold cereal either. For the last two months I’ve been giving her oatmeal on the weekends though. She started off plain refusing it, then gradually would take a bite or two, and then all of a sudden this past weekend she inhaled a whole bowl full and asked for seconds! I couldn’t believe it. Now she asks for it all the time. SO excited about this new win for the family!

Orange Creamsicle Smoothie
Serves: 1
  • ¾ cup orange juice (from about 2 oranges)
  • zest of 1 orange
  • 2 dates
  • ½ teaspoon vanilla extract
  • ¼ cup cashews, preferably soaked at least 2 hours
  • ½ cup ice
  1. Place all ingredients, except ICE, in blender; blend until smooth. Add ice and blend until thick and frosty. Serve! (If smoothie is too liquidy you either didn't add enough ice or blended too long and melted the ice. Try adding more ice or some protein powder to thicken.)
Add an extra 1 tablespoon of milled flax/chia seed to this (it will help slow the absorption of sugars into your blood stream)
Add ½ teaspoon Camu powder (if you have it) for an extra Vitamin C burst!

Glad that you enjoy the smoothie! I just use regular ice cubes. Unless I have some coconut water that I froze in an ice cube tray. That works well too.

Sunflower seeds maybe? Or avocado to thicken.
