Things have been incredibly stagnant around here lately with Scarlett’s progress. We’ve made minimal progress with her as far as vegetables go. She still won’t touch them.

Time to pull out the big guns and start studying up.

A few days ago I ordered “French Kids Eat Everything: How Our Family Moved to France, Cured Picky Eating, Banned Snacking, and Discovered 10 Simple Rules for Raising Happy, Healthy Eaters” by Karen Le Billon from Amazon.com. I can’t tell you how excited I am to get it! I’ll probably read through it in one evening and as soon as I do, I will be sure to give a review on here. Anything that can help, right??

I’m telling you right now though, I already know that our biggest problem in her lack of improvement is the lack of structure with dinner in our house. We do whatever is convenient at the time, sometimes all of us eating different meals at different times throughout the evening. It is that bad.

I bet if we get a standardized ‘dinner-time‘ established then things will improve tenfold.

Enough about that though. Let’s move on to this delicious smoothie.

Any Pecan Pie fans out there??? I know one right here…. heck ya! LOVE me some pecan pie.

And what better way to get all that great pecan pie flavor than to put it all together in a smoothie???? Granted this smoothie is a dessert smoothie and is not as healthy as a green smoothie…. but it is certainly A LOT healthier than an actual slice of pecan pie! Haha

You can personalize the smoothie to give it a little bit of a nutritional boost too. All you need to do is add some extra healthy ingredients- raw cacao nibs and lucuma powder both make excellent additions that will only add to the already delicious flavor.

I do have one gripe with this smoothie though- it’s consistency.

Without the addition of a banana or any real fruit/vegetables, it ends up pretty thin. If you are not vegan, it is pretty easy to fix that problem with some yogurt. But with vegan smoothies, thickening agents are pretty limited. You’ve got your basic nuts, flaxseed powder, chia seeds, frozen banana, tofu, other frozen fruit/vegetables. And that is pretty much it.

Banana steals the show, dominating the pecans, and since the smoothie already contains pecans, adding more nuts to the mix is just not worth the extra calories. So ultimately you’re left with only a few options to thicken this up.

You can add: tofu, 1/2 cup chopped pear, more ice, or 1/8 teaspoon xanthan/guar gum.

If you don’t mind a smoothie slightly on the thinner side, then no worries! Make as directed.

What this smoothie doesn’t lack is flavor.

Buttery, caramel-like, sweet vanilla pecan goodness!!!

Pecan Pie Smoothie

Ingredients
  • ¾ cup almond milk
  • 2 tablespoons pecans, preferably toasted
  • ⅓ cup dates (about 8)
  • 1 tablespoon ground flax seed or chia seed, optional
  • ½ teaspoon vanilla extract
  • ½ cup ice (preferably made from coconut water)
  • additional sweetener as needed
  • additional healthy add-ins: 1 tablespoon cacao nibs, 1½ teaspoons lucuma powder, or 1 scoop hemp protein powder
Instructions
  1. Place all ingredients into the bowl of a blender and process until completely smooth.

    Have you tried cauliflower pizza crust? One sneaky way to get veggies in! Also, I have tried just dipping my veggies in a little tomato sauce and it’s amazing how my kids eat them up (won’t touch if “naked”). Good luck!!

    I have really wanted to! But I can’t seem to find a solid vegan cauliflower pizza crust recipe… do you know any? And thanks for the dip idea! I’ll see if I can convince her, haha.

    You can add oats to thicken the smoothie, best to blend the oats first with some of the liquid. I made this and had to eat it with a spoon it was so thick ;) very nice!
