Equipment:

  • Blender/Food Processor
  • Microwave
  • Oven

Ingredients:

  • 3 cups raw or roasted unsalted hazelnuts
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/4 cup almond milk
  • 2/3 cup dairy-free dark chocolate, chopped

Instructions:

  1. Preheat oven to 350 degrees F and add the hazelnuts to a baking sheet in a single layer. For raw, roast for 12-15 minutes. If roasted, roast for 8-10 minutes.
  2. Remove from oven and let cool at room temperature. Transfer hazelnuts to a kitchen towel and use your hands to roll the nuts and remove most of the skins.
  3. Add the peeled hazelnuts to a food processor or high-speed blender. Blend on low until a butter is formed – about 8-10 minutes total – scraping down sides as needed.
  4. Microwave the chocolate for about 30 seconds.
  5. Now, add the remaining ingredients to your creamy mixture and blend until incorporated. Add more salt or vanilla if desired.
  6. Transfer to a clean jar and store at room temperature.
